Gifford Remodel - Brewery and Culinary Lab

In the summer of 2015, two remodel projects began at the Gifford Building. Both projects would normally be completed in about 6 months, but because the students needed the space at the beginning of the fall, both projects had to be completed in three months; half the time is would normally take.

In the summer of 2015, two remodel projects began at the Gifford Building. Both projects would normally be completed in about 6 months, but because the students needed the space at the beginning of the fall, both projects had to be completed in three months; half the time is would normally take.

On the first floor, the goal of the project was to turn an abandoned space in to the countries’ first industrial brewery on a university campus. The goal of the project on the second floor was to turn an old kitchen and classroom in to a state of the art culinary lab. Construction began in May and would have to adhere to a quick time table to ensure the projects were ready for the students in the fall.

The new culinary lab contains 8 stove, 2 refrigerators, 2 freezers, 2 convection ovens, and 3 environmental test chambers to test fermentation and long term storage of food. The increased amount of equipment required upgrading the electricity, ventilation, heating and air conditioning on the project. Careful coordination was required with the workers and building occupants to ensure minimum building disruption while also striving to obtain a high quality finished product. This led to the project being finished on time and ensured the building occupants’ happiness with the finished product.

The new fermentation lab allows for a unique opportunity for students who are interested in entering the brewing industry. Prior to the labs construction, brewing was often conducted outside on portable brewing stands so that the gas heating the beer can vent in to the atmosphere. With the brewing lab complete, students can learn in an environment which replicates what they will experience at commercial brewery. Technical and financial assistance was also provided by the local breweries in town, ensuring that the students could learn in a setting that was as authentic as possible.
